      L'Intangible is the promise of a unique culinary experience that delights the eyes as much as the taste buds. It is in Lempaut, 30 minutes from Castres, that the couple Emma Destruel and Antoine Sallier settle in a magnificent 19th century family castle, transformed into an unmissable refined address. Dive into the heart of their world and leave with a memorable souvenir.

      L'Intangible, a gourmet cuisine that promotes the terroir in the Tarn

      Inventive, creative, gourmet and delicate, there are many adjectives to describe the cuisine of this talented couple from fine establishments such as Alain Ducasse or the Élysée Palace. Behind the stove, Antoine concocts recipes in his own image, working with local products but also ingredients grown in his vegetable garden by Jérémy the gardener. From field to plate, this is the cuisine offered by these gastronomy lovers who concoct a unique menu to be enjoyed in 7 courses , accompanied or not by a food and wine pairing. Grilled white asparagus and royale completed with a garlic sabayon, shiitake and oyster mushroom ravioli with candied egg, pigeon supreme and thigh wrapped in chard leaves, the dishes evolve according to the seasons and the chef's inspiration. The end of the meal is enhanced by the creations of Emma, a pastry chef who has mastered the creation of her gourmet and light desserts to perfection.

The charm operates from the moment you arrive with the warm and caring welcome from Emma who also works in service, and William the dining room manager.     Excellent lunch, exceeded our high expectations partially because they grow most of the ingredients themselves or source locally. Interesting building and great service provided by all staff especially William.

    Probably the premier dining experience in the Tarn Even in Michelin starred restaurants around Toulouse, I have found nothing better than L’Intangible (I should, perhaps, add that I am judging the food part of the experience by what is offered to those with special dietary requirements). We first dined at L’Intangible soon after it opened 18 months ago. Since then, Antoine and Emma have perfected all elements of their restaurant. On this occasion, the mood was set by a surreal drive up the fog-bound, tree-lined avenue which leads to the château. Inside, the décor is a harmonious blend of ancient and modern and, combined with a warm welcome, we instantly felt that we had stepped inside a stylishly exclusive world. A succession of courses – up to six, depending on how you count them – offered a panoply of taste and texture, and aroma and colour. A beetroot tartlet with parmesan and chestnut, and a perfect little risotto made particularly strong impressions, and the dessert was an astonishing combination of three plates. All six members of our party were entranced by a fabulous evening. If you like fine dining, this is a restaurant that you absolutely must try at least once.
