You will be charmed by this building, formerly known as the Tour de Ciron, built on the remains of an old castle. Its history is rich, as it was first the cashier's house where miners came to collect their wages until 1860, before becoming a prestigious reception venue. Like her establishment, Yazmin is a chef who has evolved over the years. After studying culinary arts in Mexico, she worked alongside numerous renowned and Michelin-starred chefs before opening her first restaurant, L'Ambroisie, in Albi, followed by Inicio in Carmaux in July 2024. Several months of renovations were required to transform the spaces into a splendid restaurant with an elegant and refined dining room opening onto a beautiful shaded terrace.
