      With fine flesh, a delicate taste and a multitude of possibilities for cooking it, pigeon is a meat appreciated for its quality. Passionate about this exceptional bird, Lionel and Nathalie preserve the taste of the land with a renowned breeding of young pigeons for meat. Ideally located in Lombers in the Tarn, 30 minutes from Albi and Gaillac, they go beyond the borders after having conquered French chefs with pigeons raised in the best conditions.

      Nothing is left to chance by Lionel and Nathalie who control the entire production chain, from selection to marketing, including breeding, slaughtering and preparation. Housed in wooden buildings with access to the outside, the birds are pampered and raised outdoors, cared for with alternative and natural methods to avoid antibiotics and medications. This artisanal and environmentally friendly breeding works with 32 carefully selected couples with the best breeds, each giving 2 eggs which will become young pigeons intended to become future breeders, or to be cooked. Whole, shredded or ready to cook, 3 categories of squabs are offered by Lionel and Nathalie, breeders concerned about animal welfare. The birds are also fed 100% natural and GMO-free seeds.

      Pigeons du Mont Royal, a meat renowned on starred tables

      Although they are raised in the Tarn, the Pigeons du Mont Royal do not value only on the good tables of the region. Indeed, renowned chefs such as Michel Bras (who was also the first), Michel Sarran or Pierre Lambinon have the pleasure of sublimating this exceptional bird through gourmet cuisine. To taste it, you can also book in a group of 20 to 40 people at the farm inn "la Table du Mont Royal" for lunch or dinner to taste the roasted, stewed, casserole, confit or foie gras pigeon, homemade recipes that promote the terroir, and the pigeon. Live a unique and friendly experience on Thursday or Friday in the heart of the countryside followed by a visit to the farm, and find all your favorite products on the online store or directly from the Les Pigeons du Mont Royal farm.

    Unless I'm mistaken, it seems to me that this place has been permanently closed for many years. Why are the comments 3 years old? Your responsiveness shows me that I have the wrong establishment, I was thinking of a restaurant of the same name, sorry for the misunderstanding.

    A place where I would love to live... The setting is enchanting and the hosts very welcoming. I will never forget the flight of the acrobatic pigeons. The owner is a leader in his field. Not to be missed if you pass through the Tarn and want to have a good time and taste a rare (and not too expensive) dish.
