In the privileged setting of the magnificent Saint-Michel Abbey on the banks of the Tarn, in Gaillac, it houses a cellar that offers more than 100 references, with new tastings every week and introductory tasting workshops, one Friday per month. The dovecotes in the Tarn are very varied in their shape, their location and the materials used in their construction. Why are there so many of them? Pigeon droppings, the columbine, were for a long time the only authorized input in the vineyard! This is why, to promote the production of this natural fertilizer, dovecotes have been built in the 4 corners of the vineyard. There are more than 1700 to discover during your wanderings. There is even a Dovecote route, which passes through Gaillac, of course!
